Haywire 'The Bub' Sparkling Wine
The Bub 2013; 51% Pinot Noir, 49% Chardonnay. These grapes were grown in a cool mountain vineyard site near Oliver, whole cluster pressed, fermented cool, and secondary bottle-fermented. Aged in the classic method, warm disgorged and finished with a small amount of sweet white dosage. Stony, slatey, mineral characters, with surprising yeastiness considering the young time en tirage (10 months) so far. Closed with a crown cap to ensure this wine tastes just as winemaker Michael Bartier intends, this wine bursts with crisp and elegant green-apple – a lively expression of Okanagan freshness.
